Ingredients:
12 oz Amazake
8 oz Silken Tofu
2 oz Frozen Raspberry
1/2 Meyer Lemon (juice and zest)
1/2 teaspoon AgarAgar
Fresh Berries and Amazake for topping
How to make:
Put frozen raspberry and ¼ cup water in a small pot, sprinkle in agar ager, and stir well. Heat it over medium low heat and simmer for 1-2 minutes.
Meanwhile, put amazake and silken tofu in a blender, add Meyer lemon juice and zest. Blend until smooth.
With running a blender, add raspberry mixture in stream line. Continue blend until smooth.
Transfer into a dessert cup, top with fresh berries and extra amazake. Chile them in a refrigerator until you serve.
